With the holiday weekend up ahead, I thought I’d share the recipe for the absolutely delicious BBQ Sauce I recently made. Now, I know it’s much easier to head to the grocery store, grab a bottle off the shelf and enjoy. But there is a special magic in taking raw ingredients and turning into spoon-licking awesomeness.
Ingredients
- 2 cups tomato paste
- 1 cup water
- 1/2 cup vinegar
- 1 chopped onion
- 1 chopped shallot
- 5 tablespoons light brown sugar
- 5 tablespoons sugar
- 1 tablespoon fresh ground black pepper
- 1/2 tablespoon onion powder
- 1 tablespoon ground mustard
- 1 tablespoon lemon juice
- 1 tablespoon cayenne pepper
- 1 tablespoon paprika
Directions: In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes. Put it in a jar or bottle and refrigerate.
Want suggestions for using this sauce? I’ve been using this sauce on chicken and beans. For chicken, marinade chicken breasts or chicken thighs in a ziplock bag for 8 to 24 hours and then toss on the grill. I’ve also made shisk-k-bobs with marinated chicken for a full meal-on-a-stick. Want BBQ Beans? Add 1/2 cup of sauce to can of pinto or kidney beans and simmer.
